The Craft of Cooking Crappie: Red Rice Crappie

I love fall fishing for bass of course, and oh yeah, crappie as well. And the latter, I really like to eat. With that in mind, here is a crappie recipe that might interest you, should you sack some slab crappie as fall fishing improves:

Red Rice Crappie

2 cups regular white rice
8 slices of bacon
1 large onion, chopped
1 green bell pepper, chopped
1 (15-ounce) can tomato sauce
3-4 pounds of crappie fillets
Lemon juice

Prepare rice according to package directions. Fry 4 slices bacon until crisp; remove from pan, break into small pieces and set aside. Saute onions and pepper in baco drippings until tender. Combine vegetations, rice, bacon pieces and tomato sauce; spread mixture in shallow baking dish. Arrange fillets on rice, sprinkle with lemon juice and place remaining 4 bacon slices over fillets. Bake at 350 degrees for 1 hour or until fish flakes with a fork.

Makes 4-6 servings.
