The Craft of Cooking Crappie: Special Fried CrappiePosted: September 25th, 2013 by Bill Dance I love fall fishing for bass of course, and oh yeah, crappie as well. And the latter, I really like to eat. With that in mind, here is a crappie recipe that might interest you, should you sack some slab crappie as fall fishing improves: Special Fried Crappie (with dipping sauce) 2 cups self-rising cornmeal Heat oil in large skillet or fryer to over 360 degrees. Combine cornmeal, flour and pepper in shallow bowl. Beat eggs in a separate shallow bowl. Dry fillets with paper towel. Dredge each fillet in eggs, then in cornmeal mixture, back in eggs and in cornmeal. Let coated fillets rest a few minutes before cooking. Fry until golden brown. As always, catch one for me! |
