The Craft of Cooking Crappie: Special Fried Crappie

I love fall fishing for bass of course, and oh yeah, crappie as well. And the latter, I really like to eat. With that in mind, here is a crappie recipe that might interest you, should you sack some slab crappie as fall fishing improves:

Special Fried Crappie (with dipping sauce)

2 cups self-rising cornmeal
2 tablespoons all-purpose flour
4 eggs, beaten
3 pounds crappie fillets
Black pepper
Vegetable oil or shortening

Heat oil in large skillet or fryer to over 360 degrees. Combine cornmeal, flour and pepper in shallow bowl. Beat eggs in a separate shallow bowl. Dry fillets with paper towel. Dredge each fillet in eggs, then in cornmeal mixture, back in eggs and in cornmeal. Let coated fillets rest a few minutes before cooking. Fry until golden brown.
Makes 4-6 servings.
